Makes 24 bites


  • 1 ½ cups Left Coast Organics Raw Cashews
  • 1 cup firmly packed Left Coast Organics Dried Mango
  • 1 cup pitted medjool dates, packed
  • ½ cup shredded unsweetened coconut
  • 1 lime, juice and zest
  • pinch of sea salt


  1. Place the Dried Mango in a bowl and cover with warm water from a recently boiled kettle. This will help soften the Dried Mango, and ensure it blends well. After 5 minutes, drain and set aside.
  2. In a food processor, add the Raw Cashews and pulse into a fine meal. Pour into a small bowl and set aside.
  3. Add the dates and drained Mango to the food processor. Puree into a sticky paste. Add in the Raw Cashews, coconut, lime juice, lime zest and salt. Pulse repeatedly to combine.
  4. Spoon out tablespoon-sized amounts and roll into balls. Then roll into additional shredded coconut. Serve immediately or store in an airtight container in the fridge or freezer. These energy bites will keep up to a month in the freezer.
