Serves 4

Ingredients:

  • 4 tbsp butter
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 3 cups brown mushrooms, sliced
  • 1 tbsp thyme, chopped
  • 6 tbsp all-purpose flour
  • 1 tsp salt
  • 2 tsp black pepper
  • 1 cup heavy cream or half & half
  • 8 cups low sodium chicken or vegetable broth
  • 1 cup Lotus Foods Regenerative Organic Brown Basmati Rice

Instructions:

  1. Heat butter and oil in a medium pot over medium-high heat.
  2. Sauté onion, garlic, and mushrooms for ~6-7 mins, or until tender, stirring occasionally.
  3. Add thyme and flour, salt and pepper and cook for an additional 1-2 mins, stirring frequently, until fragrant.
  4. Add cream and cook for a minute or so, stirring frequently.
  5. Add broth and stir in uncooked rice. Bring to a boil, then reduce heat to medium-low, cover and simmer until rice is tender (~35 mins).⁣
  6. Add salt and pepper, as preferred. Serve immediately.
