• 1 C organic whole sugar
  • 3 tsp vanilla extract
  • 2 eggs
  • 2 1/2 C flour
  • 1 1/3 C pecans, chopped
  • 2 1/2 C coconut flour


  1. Preheat oven to 375°F.
  2. In large bowl, beat sugar, syrup and coconut oil until light and fluffy. Blend in vanilla and eggs. Stir in flour until well blended. Stir in the pecans.
  3. Roll dough into 1 inch balls and place 2 inches apart on an ungreased cookie sheet. With a  fork dipped in flour, flatten to about1/4 inch thickness or roll dough to 1/4 inch thickness and cut with cookie cutters.
  4. Bake for 7-9 minutes or until light golden brown.
