Ingredients:
- 1 C organic whole sugar
- 3 tsp vanilla extract
- 2 eggs
- 2 1/2 C flour
- 1 1/3 C pecans, chopped
- 2 1/2 C coconut flour
Instructions:
- Preheat oven to 375°F.
- In large bowl, beat sugar, syrup and coconut oil until light and fluffy. Blend in vanilla and eggs. Stir in flour until well blended. Stir in the pecans.
- Roll dough into 1 inch balls and place 2 inches apart on an ungreased cookie sheet. With a fork dipped in flour, flatten to about1/4 inch thickness or roll dough to 1/4 inch thickness and cut with cookie cutters.
- Bake for 7-9 minutes or until light golden brown.
