Ingredients:

  • 1 skinless, boneless chicken breast, diced
  • 1/2 tsp garlic, minced
  • 1 ½ C salt-free chicken broth
  • 1 small head of broccoli, broken into florets
  • 1 red pepper, cut into thin strips
  • 1 yellow squash, sliced thin
  • 1/4 tsp black pepper
  • 1 1/2 C short grain brown rice, dry
  • 2 Tbl Parmesan cheese, freshly grated

Instructions:

  1. In a deep skillet, heat chicken, garlic, broth, broccoli, red pepper and squash to boiling.
  2. Stir in pepper and brown rice, and reduce heat to a simmer.
  3. Simmer uncovered for 5 minutes. Sprinkle Parmesan cheese on top and serve.

Cooking Instructions:

  1. Boil 2 cups of water and pinch of salt.
  2. Add 1 cup of rice.
  3. Cover, reduce heat, and simmer for 50 minutes.
  4. Remove from heat and let sit, covered, for 10 minutes.
  5. Fluff with a fork and serve.
