During wheat grain processing, the germ and the bran, the most nutrient-rich parts of the grain, are lost. Valuable amounts of fibre, magnesium, manganese, iron, B vitamins, calcium, folic acid, and zinc are lost. Whole wheat flour is made with minimal processing and is nutritionally superior to bleached flour and enriched flour (has nutrients added back after processing).
