Ingredients:
- 1 skinless, boneless chicken breast, diced
- 1/2 tsp garlic, minced
- 1 ½ C salt-free chicken broth
- 1 small head of broccoli, broken into florets
- 1 red pepper, cut into thin strips
- 1 yellow squash, sliced thin
- 1/4 tsp black pepper
- 1 1/2 C short grain brown rice, dry
- 2 Tbl Parmesan cheese, freshly grated
Instructions:
- In a deep skillet, heat chicken, garlic, broth, broccoli, red pepper and squash to boiling.
- Stir in pepper and brown rice, and reduce heat to a simmer.
- Simmer uncovered for 5 minutes. Sprinkle Parmesan cheese on top and serve.
Cooking Instructions:
- Boil 2 cups of water and pinch of salt.
- Add 1 cup of rice.
- Cover, reduce heat, and simmer for 50 minutes.
- Remove from heat and let sit, covered, for 10 minutes.
- Fluff with a fork and serve.
